Happy Thanksgiving

One our favorite parts of our family's Thanksgiving celebration is the Beattie Pecan Pie. Here is my recipe for the decadent dessert. Enjoy!

5 hr (includes making pastry and cooling pie)

INGREDIENTS      

·         Pastry dough

·         3/4 stick unsalted butter

·         1 1/4 cups packed light brown sugar

·         3/4 cup light corn syrup

·         2 teaspoon pure vanilla extract

·         1/2 teaspoon grated orange zest

·         1/4 teaspoon salt

·         3 large eggs

·         2 cups pecan halves (1/2 pound)    

·         Whipped cream or vanilla ice cream (for serving; optional)

PREPARATION    

1.      Preheat oven to 350°F with a baking sheet on middle rack. 

2.      Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 12-inch round and fit into a 9-inch pie plate. Trim edge, leaving a 1/2-inch overhang. Fold overhang under and lightly press against rim of pie plate, then crimp decoratively. Lightly prick bottom all over with a fork. Chill until firm, at least 30 minutes (or freeze 10 minutes). 

3.      Meanwhile, melt butter in a small heavy saucepan over medium heat. Add brown sugar, whisking until smooth. Remove from heat and whisk in corn syrup, vanilla, zest, and salt. Lightly beat eggs in a medium bowl, then whisk in corn syrup mixture. 

4.      Put pecans in pie shell and pour corn syrup mixture evenly over them. Bake on hot baking sheet until filling is set, 50 minutes to 1 hour. Cool completely.

Stowe has seen condominium sales, and prices, rise significantly in the last two years. Much if this is attributed to the announcement of Vail Resorts purchasing Stowe.   • Make sure to contact your insurance agent to include extra coverage for renters
  • Make sure to have the proper smoke and carbon monoxide detectors installed. In Vermont photoelectric smoke detectors are need to be in every sleeping room

Stowe's Foliage - Better Late Than Never!

Although Stowe's world famous foliage season got off to a late start, the stunning colors are here in full force! Depending of which weather expert you believe the colors were slow this year due to too much rain, too little rain, too much heat... but whatever the reason the leaves are beautiful now.

This would be a great time to extend your Columbus Day holiday and visit the area, or if you are a local get out for a drive! Explore the Stowe, Morrisville, Cambridge loop via Smuggler's Notch; drive the back way to Waterbury though Stowe Hollow or loop through Morrisville, Johnson and Belivdere.

This is least weekend of the season for the Summer Adventure Activities at Stowe Mountain Resort. Zip-line or climb the Treetop Adventure course surrounded by the glorious foliage. Drive or ride the gondola to the top of Mt. mansfield to take advantage of the spectacular views. 

However you choose to enjoy this time of year, make the most of it!

The British Are Coming (To Stowe Vermont, That is...)

The highly anticipated annual British Invasion starts Friday 9/15 and runs through Sunday 9/17. Dubbed the "Largest All-British Motorcar Lifestyle Event in the USA" is 3 fun filled days of events that celebrate British Motorcars and all things British. The festivities kick off Friday evening with a Street Dance Party in the heart of Stowe Village. Saturday and Sunday feature auto displays, contests and parade. Celebrate Everything Vermont and Mountain Biking in Stowe, Vermont - June 23-25

B3 - Sponsored by Stowe Mountain Bike Club

4th annual town wide event June 23-25. Featuring Vermont music, Vermont craft libations (beers, wines, spirits, ciders, root beer), and a celebration of Vermont mountain biking. Admission is free and a kid friendly event.

This 3 day festival features free group rides, family friendly events, food and drink specials, live music and more! Area restaurants are hosting events and food specials. Area bike shops are hosting free mountain bike group rides in town which will start and end at participating B3 Fest venues.

B3 kicks off Friday 6/23 with an awesome Village Block Party at 4:30 followed by a Critical Mass Ride up the Mountain Road at 6:45.

Thanksgiving Pecan Pie

One of my favorite dishes at Thanksgiving is Pecan Pie. This is a fantastic recipe. If you want to add a tasty surprise, just add a few chocolate chips and watch everyone’s eyes light up!

Vermont Season Pass Deals

We have finally had our first hard frost and we woke up to snow in the higher elevations this morning! The foliage has been spectacular this fall, and as Stowe moves past peak it is time to start thinking SNOW and SKIING. There are still a few weeks left to take advantage of great deals on season passes and discount cards to area resorts and touring centers. 

Stowe Mountain Resort offers early season discounts on the traditional Gold and Silver passes but there are other cost saving options available as well. If you live or work in the area you may be eligible for The County Pass or the Stowe Area Association Pass. College Students, Young Adults and Seniors all are eligible for discount season passes and many of then also offer additional savings if purchased before 11/6/2016; so check out Stowe Mountain Resorts Pass Site for details.

Maybe you prefer one of Vermont's other fantastic resorts; or want to ski several different mountains this winter check out the  Ski Vermont website for discounts around the state. Want to leave the state this winter, ready to try skiing out West? You still don't need to pay rack rate, check out Snow.com for great deals on multi-resort passes in Colorado, Utah and others.

However you pay to play on the slopes or trails, just make sure you get out and enjoy this winter!

 

New Around Town

The summer of 2016 has ushered in a variety of new activities, restaurants and shops in Stowe, Vermont. Already in the first few weeks, of what is turning out to be a long run of glorious weather, the town is benefitting from new endeavors from local entrepreneurs. Several long awaited businesses have opened; The Alchemist Brewery and the all new Adventure Center at Spruce Peak. Both are turning out to be big crowd pleasers as well as drawing huge crowds! Make sure you check out both websites for hours and tips on how to make the most of your visit.

Down in the village we are enjoying The Country Store on Main in the renovated Lackey's building and Tap 25 in the renovated Stowe Hardware building. Wendy's Hot Dog stand is operating on the porch of the IC Scoops building providing a great placed for a quick snack in the village. Along the rec path on the patio of the Rusty Nail, Jackwax offers out of this world gourmet snow cones. Up the Mountain Road, Stowe Kitchen & Bath has completed their extensive renovations which include a full kitchen for cooking classes and demonstrations. Decisions boutique has opened next door to Stowe Kitchen, featuring women's fashions and accessories.

The list of new businesses wouldn't be complete without a shout out to some older, new businesses: PK Coffee in the Gale Farm Center and Stowe Cider tasting room in the Red Barn shops. Be on the lookout for additional grand openings in the next couple of weeks as the town welcomes Junior's Italian Restaurant  (in the former Gracie's building), Public House on Main in the Lackey's building and Bunyabunya Boutique on the Mountain Road next to the Art Stowe.

It is so exciting to see this whirlwind of new activity around town, bringing great energy and excitement to Stowe, Vermont!
